Trillium aims to present a fresh approach to fine dining, characterized by its relaxed atmosphere and focus on choice. Chef Patron Glynn Purnell explains that the restaurant’s ethos is centered around allowing guests to dine “on their own terms,” whether they prefer a traditional three-course meal or opt for sharing plates.
“At Trillium, choice is at the heart of the experience. We want our guests to enjoy the menu however they like,” says Glynn Purnell. “Whether that’s a traditional three-course meal or a personalized selection of sharing plates. It’s all about dining on your own terms, having as much or as little as you like, spending what you want, with no rules.”
Seasonal and Innovative Cuisine
The menu at Trillium is designed to be bold and seasonally inspired, with a focus on shared dining that encourages diners to explore multiple dishes in one sitting. The team explains that this flexible style will allow guests to sample various flavors, textures, and culinary influences across the table.

Exceptional Culinary Team
The kitchen at Trillium will be led by Chef Patron Glynn Purnell, supported by Head Chef Rob Palmer and Sous Chef Andrew Kay. Rob Palmer brings a wealth of experience to the team, having earned his reputation as Head Chef at Peel’s restaurant in Hampton Manor, where he secured a Michelin star in 2016. He later founded and led Toffs by Rob Palmer in Solihull and served as Executive Chef at Ansty Hall in Coventry.
Curated Wine List
Phil Innes of Loki Wines will curate the wine list, which aims to be just as significant as the food. “We’re creating a wine list that holds as much significance as the food,” says Phil Innes. “It’s not about status: it’s about a dynamic, changing selection that highlights lesser-known wines and unexpected discoveries.”
The wine list will regularly rotate to showcase a range of options, from hidden gems and natural producers to renowned classics. Phil Innes has designed an exclusive signature wine for the restaurant, which he created personally.
Contemporary Interior Design
The contemporary interior design at Trillium is inspired by folklore and the rhythms of nature, creating an intimate and inviting atmosphere. Ethereal details such as hand-painted finishes, etched glass, and dappled, woodland-inspired lighting infuse the restaurant with a sense of movement, mystery, and poetic charm.
Outdoor Terrace
The Trillium team has also created a lively outdoor terrace just steps from Colmore Row. This space is ideal for enjoying a glass of wine and sharing small plates while taking in the vibrant city atmosphere.

Glynn Purnell, a renowned chef celebrated for his bold flavors and inventive cooking, is one of the UK’s most acclaimed chefs. He earned Birmingham’s first Michelin star in 2005 at Jessica’s and ran his flagship restaurant, Purnell’s, which held a Michelin star from 2009 until its closure in 2024.
Phil Innes is the founder of Loki Wine, Birmingham’s leading wine retailer and bar. Through Loki, Phil has played a key role in shaping the city’s modern wine culture.
